Mexicali Bagel & Lox

Serves: 2-4

INGREDIENTS

  • 14-16 oz smoked salmon
  • Bagels of choice (cheddar jalapeño or asiago work great!)
  • Rojo’s Mexicali Dip
  • 1 lime (juice and zest)
  • ¼ tsp cumin
  • ¼ tsp smoked paprika
  • ¼ tsp chili powder
  • 2 tbsp chopped cilantro
  • 1 tbsp olive oil

Toppings:

  • Pickled red onion
  • Sliced cucumbers
  • Cotija cheese
  • Avocado slices
  • Fresh cilantro
  • Salt & pepper

DIRECTIONS

Step 1 – Marinate the smoked salmon

In a small bowl, mix the juice and zest from one lime, ¼ tsp cumin, ¼ tsp smoked paprika, ¼ tsp chili powder, 2 tbsp chopped cilantro, 1 tbsp olive oil, salt and pepper. Pour the marinade over the smoked salmon, lightly tossing to coat.


Step 2 – Make Your Bagel

Toast your bagels and spread a thick layer of Rojo’s Mexicali Dip and smoked salmon. Add toppings of your choice: Pickled red onion, sliced cucumbers, cotija cheese, avocado slices, fresh cilantro, salt and pepper. Enjoy!
