Queso Blanco Scrambled Eggs

INGREDIENTS

  • Rojo’s Queso Blanco (mild or medium)
  • 4 large eggs
  • 2 tbsp butter
  • Fresh scallions
  • Salt & pepper

TOOLS

  • Non-stick skillet
  • Medium mixing bowl

DIRECTIONS

Step 1 – Scramble the eggs

In a medium mixing bowl, whisk the eggs, queso, salt, pepper, and some freshly chopped scallions.


Step 2 – Cook

Melt the butter in a non-stick skillet and pour the scrambled egg mixture in after the butter begins to simmer. Stir the eggs as they cook and remove from heat once they have just begun to solidify.

Step 3 – Serve

Serve the queso scrambled eggs with toast and mixed berries. Pour extra queso on top for a cheesy finish!
